Cooking with Carrots

We often speak with people who request tips for incorporating plant-based tips into their daily lives, whether through the use of new ingredients or transforming their favorite vegetables into a main dish.

We love these requests because it allows us to show off the creative muscle of plant-based folks!  So today, we are introducing the magic of one of favorite root vegetables: the carrot!

We know that carrots make great side dishes: when roasted, their natural sweetness shines; when eaten raw, they have a crunch like no other; and when steamed, they are the perfect accompaniment to any vegetable medley.

But did you know you can also add different flavors to transform carrots into some of the most popular meat-based ingredients? Oh yes, it can happen and we can show you how!

The key to both ingredients is found in a small bottle of liquid smoke.

For many people, breakfast isn’t breakfast without a plate full of crispy bacon or a bagel and lox. We love these recipes from Yumsome and The Colorful Kitchen, which turn the mighty carrot into breakfast staples. Not only are they simple to make, but they are packed with beta carotene, which is essential to eye health, as well as Vitamin A, which protects the skin from sun damage.
