Cooking with Cauliflower

If you aren’t a cauliflower believer, it’s time you get with the program. Cauliflower is such a versatile vegetable, and with relatives including broccoli, Brussels sprouts, cabbage, collard greens, and kale, it’s no surprise that these white cruciferous veggies are good for you!

Next time you buy cauliflower, do yourself a favor and experiment a little. There’s more to it than just steaming (a lot more, in fact). With the help of a food processor, you can make some magical things, and we will show you how.

Let’s start off with cauliflower rice. This recipe from Minimalist Baker is essentially the starting point for all cauliflower recipes. To begin the process, cut your cauliflower into four segments. Using the grater attachment on your food processor, grate the cauliflower into rice sized pieces. To cook, sauté in a large skillet over medium heat in 1 tbsp of oil. Cover with a lid so the cauliflower steams and becomes tender. Cook for 5-8 minutes and season as desired. You can also use cauliflower rice as your base for fried rice.
